Cajun Pork Tenderloin with Autumn Fruit Salsa

Ingredients

  • 6 tablespoon Paprika
  • 2 tablespoon Onion powder
  • 2 tablespoon Cayenne
  • 1 tablespoon Dried thyme
  • 1 tablespoon Oregano
  • 5 tablespoon salt
  • 2 tablespoon garlic powder
  • 1 tablespoon +1/2 tsp white pepper
  • 1 tablespoon + 1/2 tsp black pepper
  • 1/2 pound Fresh cranberries
  • 1 1/2 pears finely diced
  • 1/8 pound dried apricots finely diced
  • 1/4 fresh pineapple finely diced
  • 1/2 cup Golden raisins
  • 1 cup Brown sugar
  • 3/8 cup Cider Vinegar
  • 2 tablespoon brandy

Instructions

  1. Mix together the following for Cajun Seasoning:
  2. paprika
  3. onion powder
  4. cayenne
  5. dried thyme
  6. oregano
  7. salt
  8. garlic powder
  9. white pepper
  10. black pepper
  11. Coat 2 pork tenderloins completely with mix. Sear pork on all sides in very hot pan with a small amount of oil. Place in roasting pan and finish in 350 degree oven until pork reaches 160 degrees. Serve warm with Salsa.
  12. For the Salsa:
  13. Finely dice all fruits except cranberries and raisins. Simmer sugar, vinegar and brandy on stove - add fruit and simmer until cranberries are cooked. Serve with pork.
