Cajun Pork Tenderloin with Autumn Fruit Salsa
Ingredients
- 6 tablespoon Paprika
- 2 tablespoon Onion powder
- 2 tablespoon Cayenne
- 1 tablespoon Dried thyme
- 1 tablespoon Oregano
- 5 tablespoon salt
- 2 tablespoon garlic powder
- 1 tablespoon +1/2 tsp white pepper
- 1 tablespoon + 1/2 tsp black pepper
- 1/2 pound Fresh cranberries
- 1 1/2 pears finely diced
- 1/8 pound dried apricots finely diced
- 1/4 fresh pineapple finely diced
- 1/2 cup Golden raisins
- 1 cup Brown sugar
- 3/8 cup Cider Vinegar
- 2 tablespoon brandy
Instructions
- Mix together the following for Cajun Seasoning:
- paprika
- onion powder
- cayenne
- dried thyme
- oregano
- salt
- garlic powder
- white pepper
- black pepper
- Coat 2 pork tenderloins completely with mix. Sear pork on all sides in very hot pan with a small amount of oil. Place in roasting pan and finish in 350 degree oven until pork reaches 160 degrees. Serve warm with Salsa.
- For the Salsa:
- Finely dice all fruits except cranberries and raisins. Simmer sugar, vinegar and brandy on stove - add fruit and simmer until cranberries are cooked. Serve with pork.
