Summer Salsa Recipe

Ingredients

  • 1 1/2 c chopped apricots or peaches
  • 2/3 c chopped green pepper
  • 2/3 c chopped red sweet pepper
  • 3/4 c chopped seeded cucumber
  • 1/4 c sliced green onion
  • 1 - 2 seeded & chopped jalapeno peppers (handle carefully!)
  • 2 T honey
  • 2 T lime juice
  • 1 T fresh cilantro or parsley

Instructions

  1. Combine all ingredients in a medium mixing bowl.
  2. Cover & chill up to 4 hours, stirring once or twice.
  3. Yields: 2-1/2 cups
  4. Can double.
