Summer Salsa Recipe
Ingredients
- 1 1/2 c chopped apricots or peaches
- 2/3 c chopped green pepper
- 2/3 c chopped red sweet pepper
- 3/4 c chopped seeded cucumber
- 1/4 c sliced green onion
- 1 - 2 seeded & chopped jalapeno peppers (handle carefully!)
- 2 T honey
- 2 T lime juice
- 1 T fresh cilantro or parsley
Instructions
- Combine all ingredients in a medium mixing bowl.
- Cover & chill up to 4 hours, stirring once or twice.
- Yields: 2-1/2 cups
- Can double.
