Green Chile & Chicken Stew
Ingredients
- 1 cup Onion Chopped
- 1 teaspoon Fresh garlic, peeled Minced
- 2 tablespoons Vegetable oil
- 1 16 oz. jar Salsa Verde
- 1 10 1/2 oz. can Low sodium chicken broth
- 1 cup Salsa
- 1 cup Water
- 1 can Carrot Chopped
- 1 4.25 oz. can Diced Green chilies Drained
- 1 teaspoon Dried oregano
- 1/2 teaspoon Course ground pepper
- 3 cups Cooked chicken Shredded
- 1 15 oz. can Pinto beans Drained
Instructions
- Cook onion and garlic in oil until onion is tender. Add remaining ingredients except chicken and beans. Bring to a boil. Reduce heat to low. Cover and simmer 15 minutes, stirring occasionally. Add chicken and beans. Cook 15 minutes, stirring occasionally.
