Green Chile & Chicken Stew

Ingredients

  • 1 cup Onion Chopped
  • 1 teaspoon Fresh garlic, peeled Minced
  • 2 tablespoons Vegetable oil
  • 1 16 oz. jar Salsa Verde
  • 1 10 1/2 oz. can Low sodium chicken broth
  • 1 cup Salsa
  • 1 cup Water
  • 1 can Carrot Chopped
  • 1 4.25 oz. can Diced Green chilies Drained
  • 1 teaspoon Dried oregano
  • 1/2 teaspoon Course ground pepper
  • 3 cups Cooked chicken Shredded
  • 1 15 oz. can Pinto beans Drained

Instructions

  1. Cook onion and garlic in oil until onion is tender. Add remaining ingredients except chicken and beans. Bring to a boil. Reduce heat to low. Cover and simmer 15 minutes, stirring occasionally. Add chicken and beans. Cook 15 minutes, stirring occasionally.
