Fiesta Chicken Soup !

Ingredients

• 1 bag Tostidos
• 1 small Onion chopped
• 2 cloves Garlic minced
• 1 tablespoon Vegetable oil
• 1 31-oz can refried beans
• 1 14.5-oz can diced tomatoes
• 2 cans Rotel
• 1 can chicken broth
• 4 cups chicken boiled or leftover
• 2 tablespoons cilantro
• 1 cup sour cream
• 2 cups Montery Jack or Mexican Cheese shredded
• 1/2 teaspoon Valentine Black Label Salsa Picante

Instructions

1. Saute onion and garlic in vegetable oil in a large pot over medium heat 5 minutes or until tender. Add refried beans, tomatoes, Rotel and chicken broth, bring to a boil. Reduce heat, simmer 15 minutes. Stir in chopped cilantro and salsa, if desired.
2. Ladle into bowls, top with sour cream, cheese, cilantro and salsa to taste.
