Mexican Summer Salad

Ingredients

  • 1 bag frozen pomegranate seeds
  • 2 cans corn
  • 1 grapefruit lobes halved (and zest included)
  • 2 tablespoon pomegranate vinegar or to taste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds
  • Salt and pepper
  • 12 Cherry tomatoes
  • 2 large garlic cloves
  • 2 Shallots
  • 2 Thai chilis
  • Olive oil
  • 250 gram Ground beef sautéed in olive oil with onions

Instructions

  1. Mix everything except the ground beef and chill briefly. Serve with sautéed hot /warm ground beef on top.
