Mexican Summer Salad
Ingredients
- 1 bag frozen pomegranate seeds
- 2 cans corn
- 1 grapefruit lobes halved (and zest included)
- 2 tablespoon pomegranate vinegar or to taste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander seeds
- Salt and pepper
- 12 Cherry tomatoes
- 2 large garlic cloves
- 2 Shallots
- 2 Thai chilis
- Olive oil
- 250 gram Ground beef sautéed in olive oil with onions
Instructions
- Mix everything except the ground beef and chill briefly. Serve with sautéed hot /warm ground beef on top.
