Spicy Chicken Rice Soup
Ingredients
- 3 14.5-oz can chicken broth (14 1/2 ounce cans)
- 3 cups Rice cooked
- 2 southwestern chicken strips (6 ounce packages) fully cooked and diced
- 1 16-oz can V8 vegetable juice (16 ounce can)
- 1 15.25-oz can whole kernel corn (15 1/4 ounce can) undrained
- 1 1/2 cups salsa
- 1 4-oz can diced green chilies (4 ounce can) undrained
- 1/2 cup green onion chopped
- 2 tablespoons fresh cilantro minced
- 4-cheese Mexican blend cheese shredded

Instructions
- 1In a large pot, combine first 9 ingredients. Bring to boil. Reduce heat; cover and simmer for 15 minutes or until heated through.
- 2Garnish with toppings.
