Broccoli Summer Salad

Ingredients

  • 1 bunch broccoli
  • 1 medium cucumber
  • 1 large tomatoes
  • 1 medium red onion
  • 1 cup grated cheddar cheese
  • 1/4 cup oil
  • 1/4 cup wine vinegar
  • 1 teaspoon garlic, minced
  • salt and pepper

Instructions

  1. Cut broccoli into bite size pieces.
  2. Cook in boiling water 2 to 3 minutes.
  3. Drain and run cold water over it to stop the cooking.
  4. Peel and slice the cucumber.
  5. Cut the tomato into bite size pieces.
  6. Mix together and add cheese.
  7. Mix together dressing ingredients and pour over salad.
  8. Toss to coat.
  9. Chill until ready to serve.
