Simple Summertime Chicken Salad
Ingredients
- 1/2 pound Chicken grilled, broiled; cubed
- 2 whole Green onions sliced
- 1 tablespoon Parsley fresh; chopped
- 2 whole Eggs hard boiled; chopped
- salt and pepper to taste
- 2 tablespoon Mayonnaise
Instructions
- Mix all ingredients together. Serve slightly chilled in a sandwich, or over lettuce for a small salad.
- Optional ingredients include walnuts, raisins, sliced seedless red grapes, almonds or pecans.
