Asian Summer Salad
Ingredients
- 8 ounces vermicelli
- 3/4 cup carrot, julienne cut
- 1/3 cup green onion, sliced
- 3/4 lb cooked chicken
- 1/4 cup vegetable oil
- 3 tablespoons rice vinegar
- 3 tablespoons soy sauce
- 2 teaspoons sugar
- 1/8 teaspoon red pepper flakes
- 1 garlic clove, minced
Instructions
- Cook pasta according to package. Rinse pasta with cool water and drain.
- Toss pasta into large bowl. Add carrots, onions and chicken to pasta, set aside.
- Mix dressing ingredients together and pour over pasta and toss.
- Chill in the refrigerator at least 1 hour prior to serving.
