Ingredients

  • 1 loaf ciabatta bread (any bread will work)
  • 2 tbsp butter
  • 1/4 cup mayonnaise
  • 1/2 tsp dried dill
  • 1/2 tsp dried basil
  • 1 tsp lemon juice
  • 4-5 slices bacon
  • 1-2 tomatoes
  • 3 large pieces romaine lettuce
  • 1/2 avocado
  • 1/4 cup parmesan cheese
  • 3 eggs

Instructions

  1. Cut the ciabatta loaf in half. Spread the butter on both sides. Toast in the oven on broil on high, but WATCH CLOSELY. It will only take a couple minutes for the bread to be perfectly toasted, but it will quickly burn, so take it out of the oven right when its golden brown.
  2. Add bacon to a pan over medium heat. Cook on both sides until its done to your liking.
  3. While bacon is cooking, add parmesan to a non-stick pan over medium heat. When the cheese begins to melt, crack eggs on top of the parmesan cheese. Let the eggs cook for 3-4 minutes, until yolks are cooked to your liking.
  4. In a small bowl, combine mayonnaise, dill, basil, and lemon juice. Stir until combined.
  5. Slice tomatoes and avocado. Wash off romaine lettuce.
  6. To assemble, spread the herbed mayo on both sides of the ciabatta. Top with bacon, tomatoes, lettuce, avocado, and parmesan eggs. Top with other piece of ciabatta and enjoy!
